Easy Layered Enchiladas

Gather the Goods:

(1 lb hamburger meat)   (1 can rotel)   (1 can enchilada sauce)  (1 package corn tortillas)  (chopped onion)  (shredded cheese)

I said Coooook iiiiiit:

Brown your meat and stick it in a bowl.

Here’s a trick… Brown a buttload of meat and bag it up for later.

A quart bag holds about 1 lb.

Stick it in the fridge to use for the week or the freezer for lata.

Back to the bowl.. Mix in about 1/4 can enchilada sauce, however many onions that float ya boat, 1/2 can rotel, and a handful of cheese.

Pour a little enchilada sauce in the bottom of the pan…just enough to cover it.

Tear your corn tortillas to cover the bowl like so…

Pour some sauce on it.

Layer your meat mixture next.

Give a little sprinkle of cheese.

Layer some mo tortillas.

Mo sauce…you getting this yet?

Do I even need to say what’s next?

On the top layer just do Tortillas, sauce, & cheese.

Layer the layers until you run out of room in your casserole dish..or run out of meat mixture.

Shove it in the oven for about 20-30 min at 450 or until it’s bubbly goodness oozes yummy.

I like to make one pan of just CHEESE only (no meat) and half of the cheese pan I will layer with rotel to make it supa yum for the adults.

Easy Crockpot Chicken and Dumplins

Gather the Goods:

Throw it all in the crockpot.

Give it a little stir.

Put the lid on it and cook on high 4-6 hours or low for 8.

When it’s all cooked and smellin yummy like this…

Take the chicken out.

And shred it up.

I use two forks and it shreds really easy. You could prob even do this with the chicken still in the pot.. But I just prefer to take it out when I do it.

Then put your shredded chicken back in the pot.

And give it another little stir.

Take your 4 biscuits and either tear them into pieces or cut them with a knife.

Whatever your inner OCD or lack thereof will allow.

Just make sure it’s about 9-12 pieces per biscuit.

Throw them in the crockpot too.

And give it a little stir.

Go do some laundry and let cook another 30 min to an hour. Mine cooked an hour. Obvs not because of laundry though. Dance moms was on.

Since you just need four biscuits for the Dumplins I baked the other four biscuits to eat with them.

This turned out so good! It was really easy to throw together!

Chicken Rolls

These Chicken Rolls are Yuuuuuummmmyyyy!  And oh so easy!

Chicken Rolls

Gather the Goods:

1 can chicken                                                                                                                          1 can GARLIC crescent rolls                                                                                                  1 can cream of chicken soup                                                                                      chopped onion (I use the frozen bag kind)                                                                                                 1 cup milk                                                                                                                   shredded cheese

This is what I use to season the chicken mixture. Optional. Up to you 😉

I quickly mixed mine in a bowl. This is not necessary ..you can just layer it on the crescent roll without mixing it. Use the whole can of chicken,…as much onion & seasoning as YOU want, & a handful of cheese.

Spoon the chicken mixture onto the crescent roll & roll up. Do this until they are all done. Duh.

Mix up the milk and can of soup in a bowl. I go ahead & mix in any chicken stuff left over.

I totally made up that name! Do ya dig it? Thought so!

This stuff seriously rocks. It taste super yum & it is so easy to make your husband could do it.

Gather the Goods:

1 can Cream of Mushroom Soup                                                                                            1 can Cream of Celery Soup                                                                                                  1 packet Onion Soup Mix                                                                                                       2lb Stew Meat

Throw it all Together:

In the crockpot….mix your soups, mix, & meat.

If you are a little less lazy than me….you can mix up the ingredients in a bowl first, add your stew meat into the crockpot, and then pour mixture over the top of the meat.

I Said Cooooook iiiiiit!

Cook it all day on low (8-10 hours) I put mine on before I left for work about 7 am. When I got home at 4pm it was ready. I put the crockpot on warm & we ate around 5pm.

I got this recipe from Kellys Korner.

It was SUPA easy peasy.

Gather the Goods:

2 lbs ground beef ( I used Lean)
1 onion, chopped..obviously I’m lazy & used the frozen bag kind
1- 14.5 oz can whole kernel corn
2- 16 oz cans of ranch style beans
3 cans of diced tomatoes (I used one reg can diced, 1 can rotel, & 1 can diced garlic/onion)
1 pkg taco seasoning
1 pkg Hidden Valley ranch dressing mix

Coooook iiiit!

Brown and drain meat.

Combine all ingredients in a large pot.  I obviously used muh crockpot.

Add chili powder, salt and pepper to taste.

Simmer 1-2 hours…or Crockpot on high for a few…or on low for a lots.

It’s pretty simple to throw all together

Add a dallop of sour cream & sprankle a Lil cheese.. Use some tortilla chips for dipping and… Yummo!

Here’s an easy peasy recipe for you to try.

Mamma’s Meatloaf.

Great for the whole family…especially the kids. Mine asked for seconds & thirds.

I did NOT add any onions or bell peppers…which would be great in this by the way…because my kids don’t like that stuff & totally freak out when they spot it.

I’m a picture person..& very culinary challenged. So I like a lot of step by step picture book type directions.

Let me break it down for you…

First: Gather the Goods

2 eggs
1 cup instant oatmeal
1 can Hunts Seasoned Tomatoe Sauce for Meatloaf
2 lbs lean ground beef

 

Preheat oven to 400 degrees.

Mix together 1/2 can of the sauce, eggs, oats, & meat.

I put about half the oats & meat in & mix it up a little and then add the rest and finish mixing.

Your hand is the absolute best way to mix it. Sorry OCD friends…but it is.

Place the meat mixture into a loaf pan & bake uncovered at 400 for ONE hour.

After an hour…take it out & drain the grease.

Pour the remaining sauce onto the top of the meatloaf. (this is where next time…I will put ketchup instead of the sauce…per Danny’s request)

Cook for an additional 10 minutes.

Then get it out & let it set for 10 min.

Dig in!

This is another super easy crockpot recipe.

Gather the goods:

1 can red beans
1 can kidney beans
1 can corn
16 oz tomato sauce

1 16 oz can diced tomatotes
1 can Rotel
1 packet taco seasoning
3 boneless chicken breasts

Throw it all in the pot

Punch the buttons to make it low for 10 hours.

When you get home from a killer day at work & that hot diggity damn scrumptious smell hits you as you walk in the door…get ya a paper plate & two forks…take the chicken out & use the forks to shred it…& throw it back in the pot & give it a good stir.

Caution: the chicken will be tender and look and smell delicio and make you want to consume it by stuffing your face nonstop until you have late night I just ate a whole pint of Ben & Jerry’s Chubby Hubby remorse

Don’t do that.

Besides. You will burn the chit out of your mouth.

Yesterday I ran home on my lunch & threw this in the crockpot. O.M.G. talk about easy peasy! And it turned out sooooo good! Daynie even ate it! Winning!

Gather the Goods:

 

4 boneless, skinless chicken breasts (frozen is fine)
one can rotel
one can condensed cream of chicken soup
one packet taco seasoning
tortillas
crockpot

I Said Cooook iiiiiit!

Place chicken in the bottom of your crockpot. Sprinkle taco
seasoning on chicken. In a bowl, combine soup and rotel Pour over
chicken.

Cook on high 4 hours.

Shred chicken with two forks and stir.

Let children pose for picture with finished product (optional)


Put mixture inside warm tortilla & roll like burrito.

If you are awesome like me then you can…add a Dollop sour cream & sprinkle of cheese inside burrito. But a side of awesomeness is totally optional.

I tried a new recipe Monday night from Pinterest…

Taco Casserole

It says the name is Walking Taco Casserole…but I totally don’t get or dig the walking part..so I dropped it. So..

DUN..DUN…DUUNNNNNN….

We had TACO CASSEROLE for dinner 🙂

The only thing I did different than the Pinterest recipe was add some chili beans & rotel. I thought it was super yummy! Danny didn’t like the beans in it..but I thought it made it perfect!

I didn’t get a pic…but the Pinterest pic is pretty close..except my Pyrex square dish looks better than the country looking metal one in the pic! ha!
